Pintastic!

Have you ever tried any recipes or maybe even a craft or project you've seen on Pinterest?

I'm dying to hear about any Pinterest Successes you've had, because I just had one tonight that I want to share with you:
 


Sticky Coconut Chicken

I made this recipe for dinner tonight and it was FANTASTIC!!!  And, honestly, I didn't have super high hopes for it.  Well, I had semi-high hopes for it because it had coconut milk in it and I love that stuff.
I pretty much followed the recipe, except:
  • I used boneless, skinless chicken breasts and I let them marinate for 2 hours. I just didn't have any thighs....though  they would've been AWESOME.  The breasts worked great, though!
  • For the rice, I used 1 cup of brown basmati rice.  I sauteed some onion until softened in olive oil, added fresh garlic to the onions, cooked for about 30 seconds and then browned the rice in the onion mixture, pilaf-style, before adding the leftover coconut milk, water and salt (about 1/2 teaspoon kosher salt).
  • I over-reduced the glaze and it turned into glaze-taffy.  Oops!  I just added some water back to it and it worked fine....but it's very hard to tell when it's thick enough because it gets very firm upon cooling. 
 Guys. Make this. The way the coconut milk, chicken and glaze taste together is so.....magical!  Not to be dramatic, but I loved it that much!  If you try it, let me know if  you loved it too.

Homemade Vanilla Coffee Creamer
It certainly wasn't a bad recipe, but I wanted more creaminess and less sweetness.  If you don't care so much about creamy and are looking for more of a sweetener for your coffee, this would be a great recipe for you to try!


Next up?  I'm going to try a recipe for iced coffee.

Happy New Year!

Hi!

I hope you had a great Holiday and here's hoping your new year is awesome!  Did you make a New Year's resolution?

What have you been up to over the last month?

We've been up to a whole lot of nothing here at Elizabeth Hill.  Our break was so great!  Especially New Year's Eve when we stayed home and made sushi and played games.  Zuddy bought Yahtzee and I've never played it until now!!  I'm hooked and we've been playing a lot.

My friend Hilary nudged me to get on Pinterest and I haven't gotten dressed for 2 days.  I've just been pinning like a freak.
